The Beauty of Swiss Meringue Buttercream

Swiss Meringue Buttercream is my absolute favorite ingredient to use on cakes both as a filling and a frosting. It's often described as elegant, silky, and beautiful and we couldn't agree more.

I first learned of this marvelous buttercream from one of my absolute favorite teachers Miso, of Miso Bakes.  I would be in awe with every Instagram picture she would post of these amazing buttercream cakes with delicate little flowers I just knew I HAD to take her class. I tried to get a spot in her London class but it was sold out so I took the next class I could in San Francisco and it was so incredibly worth it! Miso is so sweet and taught me so many things but most importantly the love of Swiss Meringue Buttercream!  Swiss Meringue Buttercream, often referred to as SMB, is not your typical tooth ache hit me with a glass of milk kind of frosting.  SMB is often thought of as refined and I believe when made right it both elevates and compliments the flavor and the texture of the sponge rather than overpowering the cake, that my friends is why it's our favorite ingredient to use on cakes and cupcakes here at Sweet Marie's.  Our clients always compliment us on our frosting and we think that it helps set us apart because it's light and fluffy and almost like whipped cream... it's just absolutely glorious!

As you can probably tell SMB is not your typical kids birthday party frosting, it takes time and care to make this tasty beauty and we don't mind rolling up our sleeves and going the extra mile to make it.  While a lot of folks may be use to the typical buttercream where you throw some sugar and butter in a mixer and let it ride. We start by, you guessed it, making MERINGUE! Ahhh, beautiful, glorious silky meringue!  We start with eggs whites and granulated sugar and carefully whisk them over a bain-marie until the proper temperature is reached, we then take our meringue and carefully and slowly mix in high quality butter till light and fluffy.  When it's all done and the perfect concistency is achieved we add our favorite vanilla beans and tada, we ice the cake. If you've ever wondered why our cakes aren't truly white it stems from the use of the butter and using real vanilla and not the imitation stuff you get at the grocery store.  We take lots of care in choosing our products to ensure the taste is just perfect.

Although making SMB is incredibly time consuming, it's my all time favorite icing because it's not sweet. It's perfectly perfect if that makes sense.  You'll taste the difference it makes on our cakes, cupcakes and cookies because it compliments everything oh, so perfectly!  We promise once you try it you'll understand why it's called everything from luxurious to glorious.
